Mud crabs are a staple ingredient in Vietnamese cuisine, especially in dishes like crab soup, crab noodle soup (bún riêu cua), or hotpot. However, selecting fresh, meaty mud crabs can be tricky if you don’t know what to look for.

1. Choose Crabs in Season

The best mud crabs are usually found during the rainy season, from May to October. During this period, crabs grow vigorously and have more meat. 2. Observe the Crab’s Color

Fresh mud crabs typically have a dark brown or reddish-brown shell. Pay attention to both the carapace (the top shell) and the apron (the underside).
