The glass noodles (miến) should only be soaked in warm water, not hot water—using hot water will cause them to expand too much and break apart during cooking.
For extra flavor, you can mix in a bit of minced shallot, wood ear mushrooms, or shrimp. These ingredients add texture and depth, making the rolls more aromatic and satisfying.
2. Wrapping the Rolls
When wrapping the rolls, avoid rolling them too tightly. A tightly wrapped roll may burst open when frying because the filling inside—especially the noodles and egg—expands slightly under heat. Instead, roll firmly but gently to allow a bit of space inside.
A handy trick for a crispier texture is to use one and a half wrappers for each roll, layering one sheet over half of another before wrapping. This method creates a sturdier shell that becomes extra golden and crunchy after frying.
After wrapping, don’t fry the rolls immediately. Let them rest in the refrigerator for about 20–30 minutes. This helps the rolls firm up, dry slightly, and hold their shape better when frying, resulting in a more even, crunchy texture.
3. Extra Tips for Crisp, Golden Rolls
