The Secret to Cooking Soft, Fragrant Rice
I still remember when I was little, cooking rice every day was quite a challenge. First, I had to light the stove, then measure the right amount of water into the pot. Only when the water started boiling could I add the rice. Halfway through, I had to scoop out some of the water, and finally, I would cover the pot and let the rice finish cooking over low heat, allowing the steam to soften the grains.
Today, with the advancement of science and technology, cooking rice has become so much easier. All you need to do is rinse the rice, put it into the electric rice cooker, press the button, and in less than half an hour, the rice is ready to serve. However, although using a rice cooker is very simple, not everyone knows the little secrets that make rice truly delicious—soft, fluffy, and full of fragrance.
Most people only add water to the rice and start cooking, but that alone is not enough! To achieve perfectly cooked rice where every grain is tender yet distinct, you just need to add two extra ingredients. For years, whenever friends asked me, “Why does your rice taste so good?”, I always shared this method. After trying it, they were amazed by how effective this trick was.
Step 1: Rinse the rice properly
Many people rinse rice by vigorously scrubbing it several times until the water turns clear. While this may look clean, it actually washes away many natural vitamins and aromatic compounds that coat the surface of the rice, resulting in rice that loses much of its natural fragrance.
The correct way is much gentler: place the rice in a bowl, fill it with water, gently rub the grains once with your hand, then rinse thoroughly under clean running water. This method removes excess starch and impurities without stripping away all the nutrients and aroma.
Step 2: Soak the rice
After rinsing, let the rice soak in water for about 15–20 minutes before cooking. This step allows the grains to absorb water evenly, ensuring the rice cooks softer and more consistently. In addition, soaking helps release subtle aromas from the rice that mix with the cooking water, enhancing the final flavor.
However, avoid soaking for too long. If the rice sits in water for more than 30 minutes, the texture may become too soft, causing the rice to lose its ideal structure.
Step 3: Water-to-rice ratio
The ratio of water to rice is one of the most important factors in rice cooking. To make soft rice without it becoming mushy, the ideal ratio is 1 part rice to 1.2 parts water. This proportion gives just enough moisture to fully cook the grains while keeping them fluffy and separate. For harder or softer rice, you can slightly adjust the ratio depending on the type of rice and your personal preference.
Step 4: Add two secret ingredients
Here lies the real secret. To achieve rice that is soft, glossy, and fragrant, simply add three drops of white vinegar and half a teaspoon of peanut oil to the water before cooking.

Vinegar: Its mild acidity changes the structure of the starch in the rice, helping the grains cook more evenly and become softer without sticking together.

Peanut oil: Just a small amount of oil prevents clumping, enhances aroma, and makes the rice appear shinier and more appetizing.
⚠️ Note: Do not use soybean oil, canola oil, or oils with a strong aftertaste, as they may overpower the natural fragrance of the rice. If possible, substitute with a teaspoon of coconut oil for an even richer, subtly sweet aroma that elevates the dish.
Step 5: Cooking and resting the rice
Most electric rice cookers are designed with automatic settings. Simply follow the instructions and let the machine do the work. Once the rice is done, resist the urge to open the lid immediately. Instead, allow the rice to rest in “warm” mode for 5–10 minutes. This final steaming stage allows the aroma to fully penetrate each grain and ensures the texture becomes light and fluffy.
