Chili peppers are a common ingredient in family meals, but many people don’t know how to store them properly, causing them to either dry out or rot. Here’s a great tip for preserving fresh chili peppers and keeping them plump and juicy like they were just picked.

Choosing the Right Chili Peppers:

Pick peppers that are fresh, evenly colored, and firm to the touch. The stems should be green and thick, and when you hold them, they should feel firm and full of water, not wrinkled or soft. These are freshly picked peppers.

How to Store Fresh Chili Peppers:

  1. Dry the Peppers: After buying them, place the peppers in a basket or on a tray to ensure they dry properly and don’t retain moisture on their skins. Moisture can cause them to rot quickly. Discard any damaged or overripe peppers.

  2. Trim the Stems: Cut the stems short if they are too long to prevent the peppers from rubbing against each other, which can cause scratches and lead to quicker spoilage. However, don’t remove the stem completely, as this can cause the pepper’s tip to rot, allowing bacteria to enter.

  3. Place in a Plastic Bottle: Pour a little cooking oil into a dry plastic bottle (like an empty water bottle) to coat the surface of the peppers. Place the peppers in the bottle and seal it tightly. Store the bottle in the refrigerator. The oil acts as a protective layer, sealing in moisture and preventing the peppers from drying out or rotting. The peppers will remain fresh for up to six months without losing their juiciness or flavor.

Alternative Method: Freezing Chili Peppers

  1. Prepare the Peppers: Discard any peppers that are damaged or overripe. Remove the stems and wash them thoroughly before letting them dry.

  2. Remove the Stems: Since you’re freezing the peppers, you can remove the stems to save space in the freezer. After cleaning and drying, place them in a freezer-safe plastic bag or container.

  3. Freeze the Peppers: Put the bag or container in the freezer. This method preserves the peppers for up to a year, keeping them plump and fresh. When you’re ready to use them, simply remove the peppers, and they’ll be ready to chop and add to your dishes. You can easily cut them while frozen, and they won’t lose their flavor or texture.

Why Storing in the Refrigerator Doesn’t Work:

Storing peppers in the fridge's regular compartment can cause them to rot due to excess moisture. They also lose moisture, resulting in dried-out peppers that don’t taste fresh. When you add dried-out peppers to dishes or dipping sauces, they won’t have the same vibrant taste or fragrance as fresh ones.

By following these storage tips, you can keep your chili peppers fresh and flavorful for longer periods, making sure they remain a perfect addition to your meals.
