Boiled corn is a familiar and well-loved snack enjoyed by many people. Although boiling corn seems simple, achieving soft, sweet, and chewy kernels requires a few helpful tricks.
Here are some useful tips that can help you boil corn more deliciously and efficiently.
1. Choose Fresh Corn
To get the best flavor, always choose freshly harvested corn. The longer corn is stored, the more its natural sweetness decreases. When selecting corn, gently peel back a small section of the husk to inspect the kernels inside. Good-quality corn will have plump, firm, and shiny kernels. If you press on a kernel and see a milky liquid ooze out, that means the corn is fresh and sweet.
Avoid corn with shriveled, soft, or dry kernels, as these are signs that it has been picked for too long. You should also check carefully to avoid buying ears that have insect damage. Ideally, choose corn that is moderately mature—corn that is too young will have overly soft, bland kernels, while overly mature corn will have tougher kernels and take much longer to cook.
2. Prepare the Corn Before Boiling
Once you bring the corn home, rinse it thoroughly. However, do not remove all the outer husks. Keep a few layers of husk on the cob, as this helps the corn retain moisture and prevents the kernels from bursting during cooking.
You should also keep some corn silk. When boiled together, the silk helps enhance the sweetness and aroma of the cooking water, giving the corn a naturally pleasant flavor.
3. Tips for Boiling Corn Perfectly

Place the corn into a pot and fill it with enough water to completely cover the ears. Then, add one small teaspoon of baking soda to the pot. Cover the pot, turn the heat to high, and bring the water to a boil. Once it boils, reduce to low heat and continue simmering.
To check whether the corn is cooked, you can gently poke a kernel with a fork. If the fork easily pierces the kernel, the corn is ready. At this point, you can remove the corn from the pot and enjoy it while it's still hot and fragrant.

Baking soda is alkaline and helps neutralize acids. Adding a small amount to the boiling water helps release niacin (vitamin B3) that is bound inside the corn, converting it into a form your body can absorb more easily.
Additionally, baking soda speeds up the cooking process, helping the kernels soften faster and become chewier. It also enhances the natural sweetness of the corn and gives it a brighter, more appealing color.
